The health benefits of Beets are tremendous and the uses for this delicious and nutritious vegetable are many. Not only can you eat Beet prepared in many different ways, you can also drink Beets to get the health benefits this plant offers and here's how.
1 qt of water
4 large beets OR 5 medium beets, peeled and very finely shredded
1/2 C honey
juice from 2 lemons
4 sprigs fresh mint (optional)
Bring the water to a boil in a heavy saucepan. Add the beets, honey and lemon juice and return to a boil. Remove the pan from heat and allow mixture to steep for 20 minutes. Strain and serve over ice with the sprig of mint.
Makes about 8 cups
